Mum’s Malaysian Curry Put all ingredients together in a casserole dish (with lid) Diced meat,( chicken or drumsticks) 1 lge onion 3or4 cloves of garlic sm piece of ginger diced potato, carrot (& any other vegie you choose) 1 or 2 chicken cubes rounded dstspn brown sugar salt 2 heaped tspns curry powder level tspn garam masala ( or chinese 5 spice ) level tspn turmeric tspn peanut butter 1 tin coconut milk (I usually get the lite variety) 1 cinnamon stick (optional) Stir well and place in 180o oven for about 2 hours (test meat as chicken may only need 1 ½ hours) If you want it extra `hot` add some chilli sauce as this gives it a nice flavour Serve with boiled (or steamed) rice.
